This refreshing Mediterranean salad combines tender brined artichokes from My Mediterranean Pantry, vibrant vegetables, and a zesty lemon dressing made with our extra virgin olive oil. Perfect as a light lunch, side dish, or part of a mezze spread.
Cook the orzo in salted water until al dente. Drain and toss with a drizzle of My Mediterranean Pantry olive oil.
In a large bowl, combine orzo, brined artichokes, tomatoes, cucumber, olives, and onion.
Whisk together lemon juice, zest, and olive oil. Season with salt and pepper.
Pour the dressing over the salad and toss gently.
Finish with parsley and mint. Add feta or pecorino if desired.
