Mediterranean Brined Artichoke & Lemon Orzo Salad

This refreshing Mediterranean salad combines tender brined artichokes from My Mediterranean Pantry, vibrant vegetables, and a zesty lemon dressing made with our extra virgin olive oil. Perfect as a light lunch, side dish, or part of a mezze spread.

Ingredients

  • 1 ½ cups orzo pasta
  • 1 cup My Mediterranean Pantry brined artichokes (ready to use - no chopping required)
  • ½ cup cherry tomatoes - halved
  • ½ cup cucumber - diced
  • ¼ cup Kalamata olives - sliced
  • ¼ cup red onion - thinly sliced
  • zest and juice of 1 lemon
  • 3 tbsp My Mediterranean Pantry extra virgin olive oil
  • 1 tbsp fresh parsley - chopped
  • 1 tbsp fresh mint - chopped
  • salt and black pepper - to taste
  • optional: crumbled feta or shaved pecorino

Instructions

1.⁠ ⁠Cook the orzo in salted water

Cook the orzo in salted water until al dente. Drain and toss with a drizzle of My Mediterranean Pantry olive oil.

2. Combine ingredients

⁠In a large bowl, combine orzo, brined artichokes, tomatoes, cucumber, olives, and onion.

3.⁠ ⁠Whisk together

Whisk together lemon juice, zest, and olive oil. Season with salt and pepper.

4.⁠ ⁠Pour the dressing

Pour the dressing over the salad and toss gently.

5.⁠ ⁠Finish with garnishes

Finish with parsley and mint. Add feta or pecorino if desired.

6.⁠ ⁠Serve immediately
