Fresh Fig, Goat Cheese & Walnut Salad with Olive Oil

This elegant Mediterranean-inspired salad celebrates the natural sweetness of fresh figs, balanced with creamy goat cheese, crunchy walnuts, and a drizzle of My Mediterranean Pantry extra virgin olive oil.

Ingredients

  • 6–8 fresh figs - halved
  • 100 g soft goat cheese (or feta - crumbled)
  • ½ cup walnuts - lightly toasted
  • 4 cups mixed salad greens (rocket - spinach - or baby lettuce)
  • 2 tbsp My Mediterranean Pantry honey
  • 3 tbsp My Mediterranean Pantry extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • salt and black pepper - to taste

Instructions

1.⁠ ⁠Arrange salad greens

Arrange salad greens on a serving platter or in a large bowl.

2.⁠ ⁠Scatter ingredients

Scatter halved figs, crumbled goat cheese, and toasted walnuts over the greens.

3. Whisk together dressing

⁠In a small bowl, whisk together honey, balsamic vinegar, and olive oil. Season with salt and pepper.

4.⁠ ⁠Drizzle the dressing

Drizzle the dressing over the salad just before serving.

5.⁠ ⁠Optional:

Optional: garnish with fresh thyme leaves or edible flowers.
