Fig & Olive Oil Cake

Fig & Olive Oil Cake (serves 8)

A rustic Mediterranean dessert made with My Mediterranean Pantry olive oil and fresh figs. Moist, fragrant, and perfect for entertaining.

Ingredients

  • 1 cup flour
  • ½ cup almond flour
  • ½ cup sugar
  • ½ cup My Mediterranean Pantry olive oil
  • 2 eggs
  • 1 tsp baking powder
  • 6 fresh figs - sliced
  • zest of 1 orange

Instructions

1.⁠ ⁠Preheat

Preheat oven to 180°C.

2.⁠ ⁠Mix dry ingredients

⁠Mix flour, almond flour, sugar, and baking powder.

3.⁠ ⁠Whisk & combine

Whisk eggs, olive oil, and orange zest. Combine with dry mix.

4.⁠ ⁠Prep to bake

Pour into a greased tin, top with figs.

5.⁠ ⁠Bake

Bake 30–35 minutes until golden.
