Mediterranean Chickpea & Brined Artichoke Stew
A hearty plant-based stew featuring My Mediterranean Pantry brined artichokes, chickpeas, and warming spices.
Ingredients

1 cup My Mediterranean Pantry brined artichokes

1 can chickpeas - drained

1 onion - diced

2 garlic cloves - minced

1 can chopped tomatoes

2 tbsp My Mediterranean Pantry olive oil

1 tsp smoked paprika

½ tsp cumin

salt and pepper to taste

fresh parsley for garnish
Instructions
1. Sauté
Sauté onion and garlic in olive oil until softened.
2. Add spices
Add paprika, cumin, and tomatoes. Simmer 10 minutes.
3. Stir
Stir in chickpeas and brined artichokes. Cook 5–7 minutes.
4. Season
Season and garnish with parsley. Serve with crusty bread.
